Jon’s “Almost-Famous” Pulled Pork with Homemade BBQ Sauce

Jon’s “Almost-Famous” Pulled Pork

One (4-6 lb.) Pork shoulder (bone-in)

Seasonings for the dry-rub:

Kosher Salt
Black Pepper
Garlic Powder
Oregano
Italian Seasoning
Ground Dry Mustard
Paprika
Chili Powder
Ancho Chile Powder
Chipotle Chili Powder
Cajun Seasoning
Worcestershire Sauce
Cumin

For the slow cooker:
One container of frozen Apple Juice Concentarte
Five Cinnamon Sticks
One cup of Apple Cider Vinegar
Liquid Smoke

Homemade BBQ Sauce:

One Onion (diced)
One Green Bell Pepper (chopped and seeded)
One Jalapeno Pepper (chopped and seeded)
2 cloves of garlic (minced)
6-8 slices of Applewood Smoked Bacon
One 8 oz. can of Tomato Sauce
One cup of Ketchup
One cup of Brown Sugar
One cup of Apple Cider Vinegar
One tbsp. of Worcestershire Sauce
One tbsp. of Paprika
One tbsp. of Dry Ground Mustard
Two tbsp. of Molasses
1/2 cup of Sugar
One tbsp. Hot Sauce ( I prefer sriracha or chili garlic sauce)

You can get any kind of rolls or bread you like for BBQ Pulled Pork Sandwiches.

Pulled Pork Burritos
The pork packs enough flavor to stand on it’s own as well. So, I also recommend picking up some tortillas,salsa and cheese. Monterey Jack or Sharp Cheddar pair well with the pork flavor. After, a night or two of sitting in the refrigerator the flavor really has a chance to soak in. It’s like the pork just keeps getting more delicious.

Pulled Pork Chili-Stew
Not a traditional chili not really a stew, but after the BBQ sauce and salsa the lack of tomatoes in this recipe is a nice change of pace.
Saute 1 chopped onion for 5 minutes on medium heat. Add two cloves of minced garlic and one diced jalapeno (stem and seed removed). Cook for another 5 minutes.
Add 3 cups of chicken stock, one can of kidney beans, one can of pinto beans and about 3 cups of Jon’s “Almost Famous” Pulled Pork. Let stock get to a boil then lower heat and let simmer for ten minutes.
The key is to not over cook this. Remember the beans and the pork are already cooked so think of this as “heat and serve.”
